The Inspirational Catholic Women annual event is coming up on May 10th. The Catholic Charities Auxiliary invites you to honor women in the Diocese who positively impact the community and selflessly help those around them.

This pinwheel art by CASA youth Dania was inspired by our 8th Annual Pinwheel Project, which features a visual display of 3,250 pinwheels - representing the number of youth in the Orange County Child Welfare System. According to her legend, St. Casilda, a daughter of a Muslim king of Toledo, Yahya ibn Ismail Al-Mamun, showed great compassion for Christian prisoners by frequently smuggling bread into the prison, hidden in a basket concealed in her clothes, to feed them. Once, she was stopped by her father and his Muslim soldiers, and asked to reveal what she was carrying in her skirt. When she began to show them, the bread turned into a bouquet of roses.⁠

She became ill as a young woman but did not trust that any of the local Arab doctors could cure her. So she made a pilgrimage to the shrine of San Vicenzo in northern Spain. Like so many other people who made their way there—many of them suffering from hemorrhages—Casilda sought the healing waters of the shrine. We’re uncertain what brought her to the shrine, but we do know that she left it relieved of illness.⁠

In response, she became a Christian and lived a life of solitude and penance not far from the miraculous spring. It’s said that she lived to be 100 years old. Her death likely occurred around the year 1050.⁠

Saint Casilda is venerated both in the Roman Catholic and Eastern Orthodox churches.⁠

From our Health and Wellness Team, a recipe of the month: A tasty dip for veggies or a fun spread on crackers or bagels. What you'll need: ⁠
Cutting board, Sharp knife, Grater, Large bowl, Spatula or spoon, Measuring spoons.⁠

Ingredients:⁠
⁠
4 ounces Cream Cheese low-fat, whipped or softened⁠
1/2 Carrot grated⁠
1/2 Red Bell Pepper finely diced⁠
2 Green Onions finely diced⁠
1 tablespoon Fresh Herbs chopped⁠
1 teaspoon Lemon Juice or 1 teaspoon Lime Juice⁠

Mix all ingredients in a bowl and stir with a rubber spatula until creamy. Spread on whole grain crackers and enjoy!⁠

Chef's Tips⁠
* This is a great way to use up leftover herbs (such as dill, thyme, oregano, basil) and vegetables.⁠
* You can also spread this on a whole grain flour tortilla, roll up, then slice for mini pinwheel sandwiches.⁠
